The grapes are meticulously hand-selected in the field and undergo a secondary selection in the winery, ensuring only the most phenolically mature berries are used. The wine is fermented in steel tanks at controlled temperatures, followed by aging in second-passage American and French oak barrels for 6 to 12 months. It is then further aged in steel until bottling, and finally spends at least 4 more months in the bottle before release.
The wine boasts an alcohol content of 13% and has a potential lifespan of 5 to 10 years. The meticulous production process results in a wine that is rich in complexity and depth. Grifalco Winery, founded in 2004 by Fabrizio and Cecilia Piccin, shifted its focus to Aglianico, southern Italy’s most important grape, after 20 years in Nobile di Montepulciano production. Now led by their sons, Lorenzo and Andrea, the winery manages 16 hectares of certified organic vineyards, aged between 10 and 80 years, across multiple municipalities in the Vulture region. Lorenzo oversees viticulture and winemaking, while Andrea handles commercial aspects and international relations. With an annual production of about 70,000 bottles, Grifalco specializes solely in Aglianico del Vulture, offering four red labels and a rosé.
