This Pinot Noir is sourced from six premium vineyards in the Waipara Valley. Beginning in late March, the harvest benefited from warm and dry weather, allowing an extended fermentation on the grape skins lasting up to 21 days. Afterwards, the wine matured for five months in French oak before being bottled.
As a result, it’s characterised by its bright and juicy profile, featuring aromas of black plum, cherries, and mixed spice. The influence of rich tannins and oak aging contributes to a smooth mouthfeel. It sits as a medium-bodied wine, concluding with a fine and lingering finish. Best enjoyed with hearty, full-flavoured dishes such as Moroccan lamb tagine or braised beef short ribs.
